They say curiosity kills the cat, I say curiosity fills my stomach. Being a gastronome, there is always a quest on a good meal.

Who doesn’t like good food? Trust me no one!

On my culinary quest I bumped into this spicy recipe, Tomato Bacon Pasta. It’s so attractive, cost effective and very easy to prepare. It’s the perfect recipe for you when you need a delicious plate of pasta, FAST!

Let’s begin…

Ingredients

  • Finely chopped bacon
  • 1 Chopped onion
  • 2-4 Garlic cloves crushed
  • 1 Red chilli finely chopped (Remove seeds if you want it less spicy)
  • Chopped tomatoes (Canned or fresh)
  • 2 Tbsp tomato paste
  • 2 Tbsp cream (Heavy or whipping)
  • 1 Pinch of sugar
  • Salt
  • Pepper
  • Seasonings
  • Pasta (Any shape)
  • Fresh basil
  • Parmesan cheese

Mode of Preparation


Step 1


Pour in water into a large pot. Add a pinch of salt. Cook pasta according to the package directions in generously salted water until al dente. Drain and leave aside. Reserve 1 cup of pasta cooking water.

Step 2


Heat oil in a skillet over high heat. Add the finely chopped bacon and fry until it’s cripsy and golden.


Step 3


Pour off the fat, reserving 1 tablespoon in the skillet and cook the onion and garlic in it until soft and translucent for 1 to 2 minutes.

Step 4


Add the chopped chillies, tomatoes, tomato paste, cream, pinch of sugar and season to taste. Allow to simmer gently for 7-10 minutes.


Step 5


Then pour some of the reserved pasta cooking water into the skillet. Scrape the skillet to dissolve in all the golden bits stuck on the pan into the liquid, stir and leave it to simmer for 3 minutes.


Step 6


Transfer the drained pasta from the pot into the skillet and toss gently to coat the pasta in the sauce. If it gets too thick, add an extra splash of the pasta cooking water to loosen the pasta and keep it saucy.

Step 7


Season with little quantity of salt and pepper (remember bacon is salty).


Step 8

Well Garnished Tomato Bacon Pasta


Garnish with parmesan cheese (grated) and fresh basil.
